I made this pulled chicken sandwich after work yesterday.
The plan was, put some chicken breasts, seasoned with a spicy rub, on the grill using indirect heat. I used hickory chips for smoke application. I also made some cole slaw for a side dish. I used a catsup-based sauce, but also put some dijon mustard in as well. I used too much mustard, but it still turned out very well.
Let me explain sauce. I really don’t have a thing for sauce, but my family sure does. They believe in the flavor added from the sauce. I think sauce is something to hide the flavor of the meat. However, I’ve come up with some outstanding sauces. This one turned out to be a great complement to the chicken. It it is supposed to be used for ribs. I found out it works well for chicken, turkey and pork.
It worked out well, except I think one of my chicken breasts got a bit dry. When I shredded them, one just felt a little tougher than the rest. Anyway, it seemed to have worked well. If I had wanted to, I could have put a dollop of cole slaw on it to moisten it. No complaints from the dinner table for sure.
